[Faculty of Health and Nutrition] Parent-child dessert making event held for children with type 1 diabetes

A dessert making event was held by the Type 1 Diabetes Patient Association, and Ms. Shoko Komatsu of Faculty of Health and Nutrition and five third-year students were in charge of creating the recipes and running the event on the day. The dessert was a "parfait-style almond pudding" made with gelatin.
The participants were elementary school to high school students with type 1 diabetes and their parents. After an explanation and demonstration of how to make the food, they practiced and tasted what they had made. The students deepened their interactions by preparing ingredients and utensils to ensure the demonstration went smoothly and supporting the children as they cooked.
While the gelatin was solidifying, participants were given a quiz to help them deepen their understanding of the ingredients used.
The participating students were able to gain experience in running a cooking class, from planning the event to preparing and cleaning up on the day, and dealing with unexpected situations during the class.
Type 1 diabetes is a disease in which the pancreas' ability to secrete insulin, a hormone that lowers blood sugar levels, is impaired. The only treatment currently available is exogenous administration of insulin preparations, and the amount of carbohydrates in the diet, which causes the greatest rise in blood sugar levels, is one of the important factors in determining the amount of insulin to be administered.
