[Faculty of Health and Nutrition] Participated in the 12th Folic Acid Tamago Koshien

On Saturday, June 14th, three third-year students Faculty of Health and Nutrition and Professor Eiji Ohara participated in the 12th Folic Acid Egg Koshien held at Kyoto Koka Women's University.
The Folic Acid Egg Koshien is a cooking contest for university students studying Nutrition and chefs working in restaurants and hotels, with the aim of making folic acid intake more familiar to people and proposing recipes to encourage people to eat meals rich in folic acid. Students from our university participated in the contest as the team "Karukaru-dan." They came up with recipes for the theme "Lunch rich in folic acid" and proposed recipes that use folic acid eggs to contribute to the recommended daily intake of folic acid (240μg for adults, 480μg for pregnant and lactating women).
The menu was called "Delicious Oeuf-Franch" and we created six dishes: rice croquettes, sardine meuniere (with tartar sauce), edamame potato salad, tomato salad, vegetable soup, and pound cake parfait. We came just short of winning, but it was a good experience that will help us in the future.
