[Faculty of Health and Nutrition] Professor Daisuke Matsuoka, Mr. Takahashi of H2O Retailing Co., Ltd., and Associate Professor Sakakura of Osaka University of Economics jointly publish a book

This book was created by Ryo Takahashi of H2O Retailing Co., Ltd., Associate Professor Takao Sakakura of Osaka University of Economics, and Professor Daisuke Matsuoka Faculty of Health and Nutrition, all of whom are involved in Shokutowa, a community-based initiative aimed at reducing food loss and waste. In the book, Professor Matsuoka introduces the Takarazuka Wase Project that has been carried out in Takarazuka City. He also comments on the significance of Shokutowa's activities in the community and on what is important to us today beyond just food. This book is recommended for students interested in food loss, resource recycling, food education, and community collaboration. We are also planning to have it available in university libraries.
