Faculty of Health and Nutrition is a faculty that aims to train students to become registered dietitians. In addition to obtaining national qualifications, we also provide various volunteer activities, programs related to food development, and additional learning (Mirai Step Program) to help students achieve their ideal future, creating an environment in which students can learn about "food, health, and nutrition." I think another attractive feature is the close relationship between all faculty and students, making it easy to talk to them. In addition, I strive to ensure that all students feel satisfied when they graduate and feel glad that they enrolled in our university.

National Exam Pass Program: From the fourth year, students will study intensively to pass the exam. With the goal of having all students take and pass the "National Dietitian Exam," students will focus all their efforts on the national exam during their fourth year. We have set up a "National Exam Support Room" to welcome students who wish to concentrate on their studies at any time.

I myself am a graduate of this faculty and hold a national license as a registered dietitian. The experience of not being able to eat as a high school student made me realize the importance of food, and I wanted to help many people, so I obtained the qualification. I believe that registered dietitians will play an increasingly active role in society in the future. The Support Office is proud to have all of its staff who are graduates and qualified, so they can understand the students' feelings and work hard together with them. One of the attractions of our university is the curriculum that allows students to study intensively for one year in the fourth year. We are conducting research using home LED hydroponic cultivation equipment so that we can provide the joy of eating to everyone. We analyze the nutritional components of vegetables grown in fields and hydroponically. We aim to develop technology to adjust the amount of nutrients depending on the difference in cultivation, and to create vegetables with nutrition that suits diseases.

Survey study on obesity and underweight rates in Japanese and Koreans
Obesity rates in Japanese and Koreans
Research on underweight rates
Japan and Korea have their own unique cultures and lifestyles, and we conducted a survey and research, thinking that these differences may affect obesity and underweight. Unexpectedly, obesity is more prevalent in all age groups in Korea than in Japan, while underweight is more prevalent in Japan. The difference in the rate of underweight in women under the age of 19 is particularly significant, raising concerns about the negative impact on health. In recent years, calorie supply and fat intake have increased in Korea and decreased in Japan, and this may be related to the increase in the rate of underweight in Japanese and the increase in the rate of obesity in Koreans.

Winner of the food allergy-friendly cooking contest sponsored by the Nippon Ham Food Future Foundation for the third consecutive year!

Create a new texture using familiar ingredients.

At the 10th Food Allergy-Friendly Cooking Contest, sponsored by the Nippon Ham Food Future Foundation, a public interest incorporated foundation, Shina Tanaka, a fourth-year student (at the time) in Faculty of Health and Nutrition at our university (member of the Basic Nutrition), won a prize with her creation "Mochi Potato Pon De Ring."
This contest invites recipes from across the country for meals, snacks, and desserts that are food allergy friendly, and this year, the 10th time the contest has been held, 417 entries were submitted.

Born from research
"Mochi Potato Pon de Ring.

Tanaka-san's graduation research in the Basic Nutrition Seminar focused on the spread of egg allergens in the living environment and the development of egg-, milk-, and wheat-free recipes to address food allergies. She entered the contest based on a recipe she devised during that research.
"I wanted to use familiar ingredients to create a new flavor. It's a snack with a texture never before seen, combining the chewy texture of mochi with the fluffy texture of potatoes. I also focused on making it easy to make using simple ingredients."
The dish was awarded a prize for its unique texture and ingenious use of ingredients.

"Throughout his research, Tanaka has worked with the perspective of 'not compromising on taste, even when creating food for people with food allergies.' I believe that his spirit of inquiry and ingenuity led to his winning this award."
The winning entries are published on the Nippon Ham Food Future Foundation website's "Food Allergy Friendly Recipe Search Site," and have also been featured in the June 2025 issue of the monthly magazine "Nutrition and Cooking" (Josai University Press).
This is the third consecutive year that our university has won an award, and it is a welcome achievement that demonstrates that our students' learning is contributing to society.

Aiming for a parfait specialty store
Nationwide expansion of "Ice Cream is a Separate Stomach"

Ice cream is a separate stomach image Naoya Okamoto, a graduate Faculty of Health and Nutrition, runs a night parfait specialty store in the shopping district of his hometown, Himeji City. In fact, before this store, he had opened a cafe on Awaji Island, but it closed after about six months. Using that failure as a springboard, this time he has made efforts such as "supporting takeout," "advertising on social media," and "Instagrammable menus," and is doing well, with about 500 customers per day. Okamoto says, "I think my sensibilities matched with the customer base. I want to liven up my hometown." He is using the food knowledge he learned at this university to contribute to the community. Three years have passed since he started his own company, "Ice Cream Betsubara Himeji Store," and now he has 20 stores nationwide, including directly managed and franchised stores, from as far north as Sendai to as far south as Miyakojima.

In order to support the job-hunting activities of their juniors, senior students who have completed their job-hunting activities hold a report session. My experiences at university and with my teachers
I want to put this experience to use in my life from now on.

Professor Komatsu taught me the importance of the PDCA cycle, which is "think," "formulate a hypothesis," "conduct an experiment," "think about the results and move on to the next step." In addition, during my graduation research, I was able to gain many new experiences, such as conducting research together and being taught how to calculate statistics for research data and how to write a thesis. He is a very kind teacher who I really love, and he is willing to listen to my concerns about not only my classes but also my personal life.
