Learn how to start a restaurant business (Summer School) will be held!
A four-day summer school (intensive course) special seminar on modern society, "Learning about restaurant startups," was held at the Sakura Shukugawa Campus. This was the first attempt at cross-boundary learning, in which students from various faculties formed mixed teams and worked to solve problems by bringing together specialized knowledge. For students from Faculty of Health and Nutrition, this was an opportunity to broaden their career options. The students were divided into groups to carry out team building, and after learning about the current state of the food and beverage industry, they worked on formulating business plans and branding and design work. On the final day, they gave presentations as a result of their work up to that point. Despite the limited time, they came up with a succession of attractive restaurant plans, and through practical training that was just like going to the office, and through learning and interaction that transcended departments, I think the students who participated were able to feel that they had grown as individuals.

Hydroponic Cultivation Research
We are conducting research using home LED hydroponic cultivation equipment so that we can provide the joy of eating to everyone. We analyze the nutritional components of vegetables grown in fields and hydroponically. We aim to develop technology to adjust the amount of nutrients depending on the difference in cultivation, and to create vegetables with nutrition that suits diseases.
Obesity rates in Japanese and Koreans Research on underweight rates
Japan and Korea have their own unique cultures and lifestyles, and we conducted a survey and research, thinking that these differences may affect obesity and underweight. Unexpectedly, obesity is more prevalent in all age groups in Korea than in Japan, while underweight is more prevalent in Japan. The difference in the rate of underweight in women under the age of 19 is particularly significant, raising concerns about the negative impact on health. In recent years, calorie supply and fat intake have increased in Korea and decreased in Japan, and this may be related to the increase in the rate of underweight in Japanese and the increase in the rate of obesity in Koreans.

Create a new texture using familiar ingredients.
At the 10th Food Allergy-Friendly Cooking Contest, sponsored by the Nippon Ham Food Future Foundation, a public interest incorporated foundation, Shina Tanaka, a fourth-year student (at the time) in Faculty of Health and Nutrition at our university (member of the Basic Nutrition), won a prize with her creation "Mochi Potato Pon De Ring." This contest invites recipes from across the country for meals, snacks, and desserts that are food allergy friendly, and this year, the 10th time the contest has been held, 417 entries were submitted.

Tanaka-san's graduation research in the Basic Nutrition Seminar focused on the spread of egg allergens in the living environment and the development of egg-, milk-, and wheat-free recipes to address food allergies. She entered the contest based on a recipe she devised during that research. "I wanted to use familiar ingredients to create a new flavor. It's a snack with a texture never before seen, combining the chewy texture of mochi with the fluffy texture of potatoes. I also focused on making it easy to make using simple ingredients." The dish was awarded a prize for its unique texture and ingenious use of ingredients.

We have also received comments from the student's supervisor regarding this award. "Throughout his research, Tanaka has worked with the perspective of 'not compromising on taste, even when creating food for people with food allergies.' I believe that his spirit of inquiry and ingenuity led to his winning this award." The winning entries are published on the Nippon Ham Food Future Foundation website's "Food Allergy Friendly Recipe Search Site," and have also been featured in the June 2025 issue of the monthly magazine "Nutrition and Cooking" (Josai University Press). This is the third consecutive year that our university has won an award, and it is a welcome achievement that demonstrates that our students' learning is contributing to society.

The Food Allergy-Friendly Meal Cooking Contest is primarily attended by students from the Basic Nutrition Seminar. Following in the footsteps of Naito, who won the previous contest, fourth-year student Kazushi Tani won the top prize in the food category at the 9th contest. "Honestly, I was surprised. I'm truly honored and happy. I'm grateful to Professor Yoshizawa, my seminar professor, for his guidance. I hope that many people will learn about this recipe and that people with and without food allergies will be able to enjoy these xiaolongbao without any problems," said Tani. Tani explained that it took him more than six months to create the recipe, starting in April. When asked about the challenges, he said, "Depending on the amount of ingredients, the xiaolongbao can end up being dry or soggy, so the most difficult part was fine-tuning the amounts of bread flour, tapioca flour, and water used in the crust." Finally, he offered a message to his juniors: "Winning the contest shouldn't be your sole objective. I think the most important thing is to create a delicious recipe that is considerate of the needs of people with food allergies."

Looking back on my four years at Faculty of Health and Nutrition, every day was filled with experiments and practical training, and I was able to gain a lot of valuable experience. I simply loved cooking, but by gaining so much knowledge in the process of becoming a registered dietitian, I became interested not only in cooking but also in developing recipes. I also won a food allergy-friendly cooking contest, which was the culmination of my studies at the university. After graduation, I would like to work as a registered dietitian in a hospital, supporting the health of many people.

Using that failure as a springboard, this time he has made efforts such as "supporting takeout," "advertising on social media," and "Instagrammable menus," and is doing well, with about 500 customers per day. Okamoto says, "I think my sensibilities matched with the customer base. I want to liven up my hometown." He is using the food knowledge he learned at this university to contribute to the community. Three years have passed since he started his own company, "Ice Cream Betsubara Himeji Store," and now he has 20 stores nationwide, including directly managed and franchised stores, from as far north as Sendai to as far south as Miyakojima.

The duties of a registered dietitian working in a hospital are diverse, but an important role is to utilize the latest medical knowledge on nutrition to support the maintenance and recovery of patients' health. This requires advanced knowledge and skills as a medical nutrition professional.

In addition to the duties of a nutritionist, such as creating menus, ordering ingredients, managing costs, and cooking, a registered dietitian who is also in charge of the on-site management also has other duties, such as creating and managing audit documents, educating staff, and creating shifts.
