Learn how to start a restaurant business (Summer School) will be held!
A four-day summer school (intensive course) special seminar on modern society, "Learning about restaurant startups," was held at the Sakura Shukugawa Campus. This was the first attempt at cross-boundary learning, in which students from various faculties formed mixed teams and worked to solve problems by bringing together specialized knowledge. For students from Faculty of Health and Nutrition, this was an opportunity to broaden their career options. The students were divided into groups to carry out team building, and after learning about the current state of the food and beverage industry, they worked on formulating business plans and branding and design work. On the final day, they gave presentations as a result of their work up to that point. Despite the limited time, they came up with a succession of attractive restaurant plans, and through practical training that was just like going to the office, and through learning and interaction that transcended departments, I think the students who participated were able to feel that they had grown as individuals.

Hydroponic Cultivation Research
We are conducting research using home LED hydroponic cultivation equipment so that we can provide the joy of eating to everyone. We analyze the nutritional components of vegetables grown in fields and hydroponically. We aim to develop technology to adjust the amount of nutrients depending on the difference in cultivation, and to create vegetables with nutrition that suits diseases.
Obesity rates in Japanese and Koreans Research on underweight rates
Japan and Korea have their own unique cultures and lifestyles, and we conducted a survey and research, thinking that these differences may affect obesity and underweight. Unexpectedly, obesity is more prevalent in all age groups in Korea than in Japan, while underweight is more prevalent in Japan. The difference in the rate of underweight in women under the age of 19 is particularly significant, raising concerns about the negative impact on health. In recent years, calorie supply and fat intake have increased in Korea and decreased in Japan, and this may be related to the increase in the rate of underweight in Japanese and the increase in the rate of obesity in Koreans.

The Food Allergy Friendly Food Cooking Contest is mainly attended by students from the Basic Nutrition Seminar. Following on from Naito, who won last time, Kazushi Tani, a fourth-year student, won the top prize in the food category at the 9th contest. "Honestly, I was surprised. I'm very honored and happy. I'm grateful to Professor Yoshizawa, my seminar teacher, for guiding me. I want many people to know this recipe, and for people with allergies and those without to be able to eat these xiaolongbao without any problems," said Tani. He said it took him more than six months to create the recipe in April. When asked about the difficulties he faced, he said, "Depending on the amount of ingredients, the dumplings can become dry or soggy, so the most difficult part was fine-tuning the amounts of rice flour, tapioca flour, and water used for the skin." Finally, a message to his juniors. "Winning a contest should not be your goal. I think the most important thing is to create a delicious recipe that is considerate of the feelings of people with allergies."

Looking back on my four years at Faculty of Health and Nutrition, every day was an experiment or practical training, and I was able to gain a lot of valuable experience. I simply loved cooking, but by gaining a lot of knowledge in the process of becoming a registered dietitian, I became interested not only in cooking but also in developing recipes. I was able to win a cooking contest, which was the culmination of my studies at the university. After graduation, I would like to work as a registered dietitian in a hospital, supporting the health of many people.

Naoya Okamoto, a graduate Faculty of Health and Nutrition, runs a night parfait specialty store in the shopping district of his hometown, Himeji City. In fact, before this store, he had opened a cafe on Awaji Island, but it closed after about six months. Using that failure as a springboard, this time he has made efforts such as "supporting takeout," "advertising on social media," and "Instagrammable menus," and is doing well, with about 500 customers per day. Okamoto says, "I think my sensibilities matched with the customer base. I want to liven up my hometown." He is using the food knowledge he learned at this university to contribute to the community. Three years have passed since he started his own company, "Ice Cream Betsubara Himeji Store," and now he has 20 stores nationwide, including directly managed and franchised stores, from as far north as Sendai to as far south as Miyakojima.
